Careful, Your Pistachios Could Burst Into Flame

Large amounts of pistachios combust very easily, so easily that there are strict guidelines for how they are shipped. In high levels of humidity, the water content of pistachios can get so high that the enzymes in the nuts start to break down fat. Eventually, the pistachios will start to burn.
